Recipes

Chicken Nugget Tacos Chicken Nugget Tacos
INGREDIENTS
24 frozen breaded cooked chicken nuggets
1/4 cup sour cream
2 teaspoons taco seasoning mix
1 to 2 tablespoons milk
1 box hard Shell tacos or 1 package  soft flour tortillas
3/4 cup shredded Cheddar cheese (3 oz)
1 1/2 cups shredded lettuce
1/2 cup Old El Paso® Thick ‘n Chunky salsa
DIRECTIONS
1.  Bake chicken nuggets as directed on package. Cover to keep warm. Reduce oven temperature to 325°F. Heat taco shells and tortillas as directed on box.
2.  Meanwhile, in small bowl, mix sour cream, taco seasoning mix and enough milk for desired consistency. Set aside.
3.  Fill each taco shell or tortilla with 2 chicken nuggets, cheese, lettuce and salsa. Drizzle each with sour cream mixture.
Spice up these tacos by using shredded Mexican cheese blend and hot salsa.

Tater Tot Nachos
  • 2 lb bag of tater tots
  • 1 lb of cooked ground beef seasoned with taco seasoning ( I used some from the freezer.)
  • 2 cups of grated cheese ( I used Mexican blend)
  • salsa, either mix it in or serve with salsa
  1. Place tater tots in a 9×13 pan. Spread meat over the top of the potatoes. Sprinkle cheese on top of meat.
  2. Bake at 400 degrees for 35-40 minutes or until heat through and done.
 Pepperoni Pizza Bread
1 - 1 lb loaf  Bread Dough, thawed or pizza dough
25 - 30 pepperoni slices
1 - tablespoon olive oil
1 - 1 1/2 cups mozzarella cheese, your preference
Parmesan cheese, garnish
pizza sauce for dipping (jarred or homemade)

1. Spray the counter with non stick spray. Roll thawed bread dough into a rectangle (about 10 x 16). Brush dough with olive oil. Arrange pepperonis and mozzarella cheese over the dough.
2. Roll up dough like a jelly roll and pinch seam to seal; place, seam side down, onto a baking sheet that has been sprayed with non stick spray.
3. Brush the top with a bit more olive oil and sprinkle on Parmesan cheese. Cover dough with plastic wrap that has also been sprayed with non stick spray. Let dough rest for about 45 minutes in a warm place.
4. Bake in preheated 350 degree oven for 30 - 40 minutes, or until golden brown and the bread is cooked through. Let cool a bit and slice. Dip bread slices into prepared pizza sauce.
